This is a recipe that I come back to each year when the persimmons are ripe. Very simple but delicious – lovely fresh tastes and it goes well with mexican food, roast pork or salads.
- ¼ cup chopped coriander
- 1½ tbsp chopped red onion
- 1 tbsp fresh lime juice
- 1 tsp chopped jalapeno pepper
- 2 ripe persimmons, peeled and coarsely chopped
- Combine all ingredients in a bowl, and stir well.
- Cover and chill.
